Sustainable Hospital Catering blended with safety control, technology & conscience.
The pioneering of the cook chill technology and the successful application of cold plating / end point retherm technology in Pamela Youde Nethersole Eastern Hospital (PYNEH) have enhanced the quality of patient food service and set the direction for the future development of catering service in the Hospital Authority. The achievement and contribution in Catering Service are well acknowledged and awarded the Hospital Authority Outstanding Team Award in 2013.
In 1998, the Catering Department has developed and piloted the computerized Dietetic and Catering Management Computer System (DCMS) to facilitate recipe standardization, nutrient analysis, menu planning, ingredient and cost control, production scheduling, food purchasing plus on-line food order by receptor hospitals The department also adopted international quality control and food hygiene standards (HACCP) to ensure food quality and safety. PYNEH Catering is currently responsible for managing and maintaining DCMS’s corporate food and recipe database for HA
Environment protection is more effective if starting from the source. The Catering Department at PYNEH has been proactive and pioneered in healthcare sector in implementing programs such as Meat Replacement program since 2006 and in 2010 instigated the “Meatless Monday” program in HA. The 2011 plan is to develop new low carbon recipes and continue serving low carbon meals for patient and environmental health.
